I have always been a fish lover. Since that first bite of a fishfinger covered in bright orange breadcrumbs I knew that fish and I were going to have a long and happy relationship. It is a shame that so much of our waters are being over-fished, and not to harp on about the issue, but I always try to buy fish with the MSC stamp on it wherever possible to ensure that it is sustainably caught and not depleting our stocks. Salmon makes several appearances in this chapter. Its oily flesh goes well with so many things and it is also big enough to stand on its own two feet, with little needed for added flavour. White fish fillets, which often need a bit of a guiding hand to add tang, bite and piquancy to boost their delicate taste, are also out in force, along with their other fish partners in crime, such as tuna and trout.
